TROPICAL MUESLI PARFAIT
A seasonal fruit parfait is the perfect way to dress up your Marge Muesli. This nutritious breakfast recipe is super simple to pull together, but pretty enough that it could easily be a top contender for a brunch spread or outdoor picnic — especially if you assemble them in glass jars or cups so your guests can see the beautiful layers. We love this tropical parfait with fresh mango and toasted coconut, but if mango is out of season feel free to use sliced banana — or any fresh fruit that makes you happy. For a slightly sweeter touch, drizzle in a spoonful of honey in between each layer.
If you make these parfaits in jars with lids, they travel well to work or make a most fine road trip or camping breakfast. You can certainly prepare them in advance (even the night before!) — just know that the muesli will soften a bit into the yogurt and fruit.
1 cup Marge Multi-Grain Muesli
1 cup plain yogurt
1 ripe mango, diced
1/4 cup unsweetened coconut flakes
1/4 cup sliced almonds
Preheat the oven to 300 F. Lay the coconut flakes out on a small sheet pan and toast until golden brown and fragrant, 4-6 minutes.
To assemble the parfaits: Use your favorite mason jars or large glass cups (so you can see the layers). Spoon in 1/4 cup yogurt, 1/4 cup muesli, a spoonful of diced mango, 2 tablespoons almonds and 2 tablespoons toasted coconut. Repeat and serve immediately.
